Blistered Shishitos with Balsamic Strawberries and Fresh Mangoes

Fresh Shishitos baked with a generous amount of oil and served with balsamic roasted strawberries and fresh mango slices – It’s Spicy, crunchy, sweet and fruity!

Ever since my friend SAN gifted me the book – The forest feast Gatherings, I am in love with every picture in the book. Erin captured every frame with so much color, love, and passion. I wish I could someday stay in the mid of forest and capture the glimpse of nature through my lens. Every frame in the book leaves you awestruck and I couldn’t appreciate food over the picture, as both of them are pure elegance.

All her recipes in the book are simple and can be prepared without so much fuss in the kitchen. The best part of the book is the way as how it has been titled based on the themes and occasions. One will be able to find out the entire spread – from starters to desserts according to the theme in the book. One of my many favorites from the book is the Blistered Shishitos. I usually pair it with balsamic roasted Strawberries and any other available fruits in my pantry. This time I paired it with Balsamic Strawberries and fresh Mangoes.

Ingredients:

  • 1 pack Shishitos Peppers
  • 1 tablespoon Olive Oil
  • Salt, as required
  • 1 cup Fresh Strawberries, hulled and cut into halves
  • 1 tablespoon Balsamic Vinegar
  • 1 cup Fresh Mangoes

Method:

  • Preheat oven to 425 F
  • Wash Shishitos peppers and dry it completely
  • Coat the peppers with olive oil
  • Lay the peppers on the baking sheet and sprinkle salt on top of it
  • Bake in the preheated oven for about 10 minutes until the peppers are lightly browned
  • Meanwhile, wash Strawberries, hull and cut into halves
  • Coat berries with balsamic vinegar
  • Lay the berries on the baking sheet and roast the berries in the preheated oven for about 5 minutes
  • Bake until the berries become soft and juicy
  • Chop Mangoes into cubes
  • Serve Shishitos Peppers with balsamic roasted Strawberries and fresh Mangoes
