Chocolate Coconut Pistachio Energy Bites | Vegan | Paleo

Chocolate Coconut Pistachio Energy Bites – Dark cocoa chocolate combined with powdered pistachios; Lightly sweetened with coconut flakes and maple syrup; Delicious buttery healthy bites to satisfy your hunger packs! It’s Paleo and Vegan!

Who doesn’t love chocolates?  Everyone love to have chocolate based desserts, ice creams, pudding, and shakes. How about energy bite? Yes, Chocolate-based coconut pistachio bites. Dark cocoa chocolate combined with powdered pistachios and lightly sweetened with coconut flakes and maple syrup. A crunchy lightly sweetened buttery delicious paleo and vegan healthy bite which comes in handy to satisfy your hunger packs. Next time when you want to munch on mid-snack, just grab a bite and go!


Ingredients:

  • 1 cup unshelled Pistachios
  • ¾ cup Unsweetened Coconut flakes
  • ½ cup of Cocoa powder (you can substitute with chocolate protein)
  • 1/3 cup Almond butter
  • 1/3 cup Maple Syrup
  • ½ teaspoon Vanilla extract

Method:

  • Process the unshelled pistachios in a food processor into a coarse powder
  • Process the coconut flakes in a food processor into a fine flour
  • Transfer the coconut flour into a large bowl and add the other ingredients with maple syrup being last
  • If the batter is too wet, add more coconut flour; if the batter is too dry, add maple syrup a little extra
  • Mix well and roll with your hands into small round bites
  • Freeze the bites in the airtight container or just refrigerate to retain its freshness
  • Coat the bites with coconut flakes or dry cocoa powder if desired.
