Dairy Free Chocolate Pudding – Delicious creamy Chocolate pudding prepared with Almond Milk

I love pudding even when I am not aware that it is called as pudding. Yes, It was on one of those days when I went to a nearby local shop with my mom for groceries, I stumbled upon tiny cups with colorful stuff inside near the bill counter. The colors inside those cups were so mild and tempting. After a lot of cry and try, my mom finally agreed to buy me a cup and I chose pinkish one. I was a typical pinky girl during my early days. Mom advised me as not to reveal about this cups to my little brothers. I promised her so. On the way back home from the shop, I ate jelly like substance stuffed inside the cup and yes, I loved it. Later, it has become my habit to insist my mom to get me one and every time I chose a different color. Of all those color, I loved the white one.

As days went, I couldn’t find these cups near to the counter. Since I never know as for how they are addressed, I was blinking every time and failed miserably in explaining what I meant to a tall brother who used to work at that store. After several months, I came to know its name as pudding and what I loved was lychee pudding. Even now, I have the habit of picking up pudding from any stores – not just one or two but a dozen of them. Though I loved them wholeheartedly, I never tried to prepare them at my kitchen. Since I tasted Chocolate pudding at a local store, I was tempted to try the same in my kitchen. And it happened finally! What’s more interesting is – It is dairy free! But then, you are free to substitute almond milk with full-fat milk. I have tried using milk and with almond milk. Both the combinations taste divine!

Dairy Free Chocolate Pudding

Dairy Free Chocolate Pudding is a simple dessert that can be prepared in few minutes to satisfy your cravings for sweet. Since it has chocolate, who wouldn’t love to have the pudding. If you are allergic to dairy products, then the diary free chocolate pudding is the best option. You can substitute almond milk with soy milk. The chocolate pudding tastes more heavenly with the vanilla ice cream and perfect after lunch treat for scorching sun. Prepare this Chocolate pudding and enjoy with a scoop of ice cream

Ingredients:

  • ½ cup Powdered Sugar
  • 1/3 cup Unsweetened Cocoa Powder
  • ¼ cup CornStarch
  • ½ teaspoon salt
  • 2 cup Unsweetened Almond Milk
  • 1 teaspoon Vanilla Extract

Method:

  • Sift cocoa powder. In a bowl, combine cocoa powder, powdered sugar, cornstarch, and salt together.
  • Now, add the almond milk to the dry powder and stir them well. Ensure there are no lumps.
  • Over medium heat, bring the mixture to boil. Whisk them occasionally to avoid sticking to the bottom of the pan and avoid lumps.
  • Once it starts boiling , reduce the flame. Add vanilla extract and stir them well
  • Let it boil for 3-4 minutes until the mixture thickens. Whisk continuously to prevent lumps.
  • Pour the mixture into ramekins. Allow the mixture to cool down at least for about two hours.
  • Cover the pudding with foil to prevent the formation of the layer on the top. Ensure there are no air bubbles.
  • Once the mixture cools down, enjoy pudding with a scoop of vanilla ice cream.
