Gujarati Lapsi – Broken Wheat Sweet

Gujarati Lapsi – Delicacy of Gujarat. Prepared with broken wheat, sugar and cardamom and smeared with Ghee.

Recently I have been experimenting different cuisines of India. I am always intrigued by the cuisine of North India and their preparation methods. Finally, the books which I have ordered have arrived and I am planning to experiment few recipes from them. This is one such recipe which caught my attention because of its simplicity and its ingredients. And who would say No to Sweet?


If you love to treat yourself with a sweet with the goodness of wheat and tantalizing aroma of cardamom, then try this Lapsi. It is as simple as it is.

Ingredients:

  • ½ cup Broken Wheat
  • ½ cup Sugar
  • ½ tablespoon Cardamom Powder
  • 3 tablespoon Ghee
  • 2 cups Warm Water
  • Pinch of Salt
  • For Garnish:
  • Few Cashews and almonds

Method:

  • In a non-stick pan, add ghee and heat it over medium flame.
  • Once the ghee melts, add broken wheat and saute on a low flame, until it turns golden brown. This might take 5 to 8 minutes. Ensure to stir it continuously.
  • Now, add warm water to the roasted wheat and cook on high flame. Allow it to boil.
  • Simmer the flame and cook until the wheat is completely done. Ensure to stir continuously to prevent being burnt at the bottom. This might take around 10 to 15 minutes.
  • Add the sugar and mix well. Sprinkle the cardamom powder.
  • Cook until the ghee separates for about 8 minutes.
  • Garnish with roasted cashews and almonds and serve hot.
