Lemon Shrimp Citrus Rice Bowl

Lemon Shrimp Rice Bowls – Shrimp cooked with mustard sauce, combined with brown rice pilaf, roasted kale and topped with avocado sauce. A perfect delicious bowl for your weeknight dinner and packed with protein too

Well, this is another favorite from the magazine. And perfect bowls for weeknight dinners. This bowl has everything you need – protein, fiber, and minerals. It just takes only 30 minutes to put through and everyone will praise you for sure for its ingredients and converting lifeless ingredients into scrumptious ones.  Yes, you wouldn’t see the Kale in the same way after this bowl.

Recipe adapted from Cooking Light Magazine

Ingredients:

  • 1 cup Shrimp, cooked, deveined
  • 1 tablespoon Fresh Lemon Juice
  • 2 teaspoon Dijon Mustard
  • 1 teaspoon Garlic, minced finely
  • 2 cups Kale, cleaned and coarsely chopped
  • 2 teaspoon Fresh Orange Juice
  • 2 teaspoon Olive Oil
  • Salt, as required
  • ¼ teaspoon freshly ground Black Pepper
  • 1 Navel Orange
  • ½ cup Brown Rice Pilaf / Cooked Brown Rice
  • 2 tablespoon Greed Goddess Avocado Sauce

Method:

  • Defreeze the frozen cooked deveined Shrimp
  • Combine lemon juice, mustard, garlic, salt and pepper with the shrimp in a bowl. The easiest way is to combine everything into a ziplock and shake them well
  • Let it rest for about 30 minutes at room temperature or chill them in freezer
  • Heat oil in a non-stick pan over medium flame
  • Add marinated shrimp to the pan and saute for about 5 minutes until the raw smell goes off and the shrimp turns brown on both the sides
  • Transfer them to the plate
  • In the same pan, add cleaned and chopped kale; saute them for about 3 minutes until the leaves are wilted
  • Now combine cooked rice/parslied brown rice pilaf and orange juice to the kale and give them a stir
  • Place the rice kale mixture in a bowl; arrange shrimp pieces on one side of the bowl; place orange slices on the other side
  • Top with avocado sauce and sprinkle grounded pepper
  • Serve warm and enjoy the citrus bowl for you dinner
