Mango Shrikhand – A delicious bowl of Mango and Yogurt whipped together and serve chilled with chopped nuts; Perfect dessert for summer.

Back home, summers are meant for Mangoes and delicious desserts prepared using them. The best way to eat Mango is to enjoy the fruit as a whole. At times, I love to whip up desserts with them. Shrikhand is a yogurt based dessert widely prepared in the western parts of India. Yogurt is strained using the muslin cloth for about 8 hours and later mixed with sugar, saffron, and cardamom. Usually, Shrikhand is chilled before serving and topped with chopped nuts for the crunchy feeling.


Shrikhand can be prepared in a variety of flavors and Mango Shrikhand is my favorite. This summer, prepare this easy yet delicious Mango Shrikhand and enjoy evenings.

Now, to the recipe:

Ingredients:

  • 2 Ripe Mangoes
  • ¾  cup Yogurt
  • ¼ cup Pure Cane Sugar
  • 1 teaspoon Cardamom Powder
  • Pinch of Saffron Strands
  • A handful of nuts, for garnish (Almonds, Cashews, and Pistachios)

Method:

  • Strain the yogurt in a Muslin Cloth overnight. Place the yogurt in the muslin cloth, tie tightly and hang them for about 8 hours to drain the excess water from the yogurt
  • Wash Mangoes; Chop and puree them in a blender
  • In a bowl, combine the strained curd and sugar. Whisk them together
  • Now add Mango puree to the bowl and combine them well
  • Dissolve the saffron strands in a tablespoon of warm water. Add to the yogurt
  • Sprinkle the cardamom powder
  • Chill in the refrigerator overnight or for about 8 hours
  • Pour the Mango Shrikhand in the serving bowls when you are about to serve and garnish with the chopped nuts
  • Serve chilled
