Pasta in homemade Pudhina/Mint Chutney!

Whenever someone says Italian cuisine, all which pops out of our mind is pasta in creamy sauce. Do you think that pasta tastes good with creamy and cheesy sauce? Well, then this pasta recipe will prove you wrong! Pudina chutney is a common chutney which everyone normally prepares for dosa and idli. Now, try this pasta in pudina chutney and give an Italian twist to your morning breakfast or evening dinner. Moreover, pasta has been favorite for kids these days. Serve their favorite pasta with our homemade pudina chutney and you will be amazed to see them eating happily.

Ingredients:

    250 gm Pasta (I used shells)
    1 bunch Mint Leaves
    ½ bunch coriander leaves
    2 Green chilies
    2 Garlic pods
    2 tablespoon Olive oil
    2 tablespoon Tamarind paste
    Salt and pepper as required
    Parsley for garnish (optional)
    Scallions for garnish (Optional)

Method:

    To prepare this pasta, let’s start by cooking pasta. In a large pot, boil water and once it starts boiling, add pasta. Cook pasta for 20 – 25 minutes. Drain the water from pasta and reserve some pasta water for later use
    In a mixer, add mint leaves, coriander leaves, chilies, tamarind paste, salt and grind them well
    In a non-stick pan, add olive oil, minced garlic and saute’ them for 2- 3 minutes
    Add the mint sauce and fry for 5-6 minutes until the raw smell goes off.
    Toss the cooked pasta for 2-3 minutes in the mint sauce.
    Add pepper if required
    If pasta is dry, add pasta water which we had reserved to give creamy texture
    Garnish with parsley and scallions.
    Serve pasta with cheesy bread on the sides
