Phyllo Bites – Savory and Fruity Bites

Phyllo Bites – Mini fillo shells filled with a spicy savory filling prepared with potatoes and peas. And if you love fruits, fill with greek yogurt and top with varieties of berries. Perfect tea time snack.

It’s finally summer in Burgh, at least I believe so. Winter in this year seems never-ending and it has been snowing for a day in a week. The sun is shining brightly today and I could see colorful blooms on every tree. Hope it doesn’t snow anymore.

I have been gardening for last two years and this year, I am still thinking whether I should go or not, in spite of the workload I have right now. I have been preparing for certifications in a new technology for my job and every evening, I have been spending time in reading books, coding and trying to understand the basics. Yes, I always want myself to be strong on basics and the rest can build up easily on the strong basics. I spend very few hours in my kitchen and have been preparing one-pot recipe for most of my meals. I love to have a perfect tea time with a snack on weekends – a cup of hot coffee, crisp samosas and crunchy snacks, and of course with a best friend. The mere narration of it sounds so tranquil. Isn’t it?

And wait, I have a great new from my side for you, guys – KarthisKitchenStudio turned 2 yesterday. It has been a wonderful journey over last two years and I learned/unlearnt skills. I cooked a plethora of dishes, learned techniques in photography and made new friends in the blogging world and in the real world. Thank you much for all the love you showered on me. There had been many ups and downs in the way but then, the love from you all made me keep up the faith and continue down the lane.  I understand I couldn’t post on a regular basis and sometimes, I couldn’t repay for the love you have showered on me. I regret that and I would love to be regular on this platform. And I mean it.

For my blog anniversary, I wanted to celebrate my little success with a small party – a perfect tea time with my blogging partner – SAN who takes care of the technical aspects – Blog design and Plug-ins. I prepared fillings – savory and chopped fruits for the fillo shells. We had savory and fruity phyllo bites with a hot cup of chai in my balcony overlooking the highway. And it was a perfect tea time! And a perfect celebration.

I used Athens Fillo Shells and I used Chobani Key Lime Flavored Yogurt.

Savory Filling – Ingredients

  • 1 tablespoon Cooking Oil
  • 2 large Potatoes, chopped finely
  • ½ cup Green Peas
  • 1 teaspoon Cumin Seeds
  • ½ teaspoon Coriander Seeds
  • ¼ teaspoon Red Chili Powder
  • Salt, as required
  • Lemon juice, as required

Fruity Filling

  • Greek Yogurt
  • 1 cup Chopped Fruits (blueberries, Mango, and Strawberries)

Fillo Shells

  • Two pack – Athens Mini Fillo Shells

Method:

  • Let’s prepare savory filling first.

Savory Filling:

  • Heat a Kadai with oil over a medium flame
  • Once the oil is hot, add chopped potatoes and peas
  • Combine them well
  • Grind cumin seeds and coriander seeds into a fine powder
  • Add red chili powder and ground powder to the potatoes
  • Saute them well
  • Cook over medium flame until the potatoes are cooked and crunchy

Fruity Filling:

  • Chop all the berries you want to use
  • I used Strawberries, blueberries, and Mangoes
  • Use greek yogurt of your choice
  • I used Key lime Chobani yogurt

Arranging Bites:

  • I used Athens Mini Fillo Shells
  • Scoop a spoon of savory filling and fill the fillo shells with the filling
  • Serve savory phyllo bites with lemon juice on the side
  • Fill the fillo shells with Greek yogurt. Arrange chopped fruits on top of the yogurt
  • Serve fruity Phyloo bites

Just fill the bites before serving so that it prevents bites from becoming soggy. It was delicious and we ended up with finishing up two packs of fillo shells. And it tasted heavenly with a hot cup of chai, flavored with spices – Masala Chai.
