Poha Almond Laddu

Delicious evening snack!

Poha Almond Laddu – Delicious balls prepared with rice flakes and almond flour with lots of ghee and sugar in it. Simple yet delish!

Hi folks, how about starting the year with a simple and sweet recipe.


Ingredients:

  • ½ cup Poha\rice flakes
  • ½ cup Almonds
  • ½ cup Ghee\Clarified butter
  • ½ teaspoon Cardamom Powder
  • ½ cup Sugar
  • A handful of Nuts – Cashews and Pistachios

Method:

  • Grind the rice flakes in a mixer into a fine powder.
  • Grind almonds using a mixer into a fine powder.
  • Combine poha and almond powder in a bowl.
  • Pulse sugar once in a mixer. We don’t need fine powder. It should be a bit coarse.
  • Add powdered sugar and cardamom powder into the flour in the bowl.
  • Add nuts to the mixture and combine well.
  • Heat ghee over medium flame. Add ghee to the flour.
  • When the ghee is warm, roll the flour into small circles. Ensure to add ghee little by little. It is easy to roll the flour into circles when the ghee is warm. Grease your palm with ghee to avoid stickiness.
  • Repeat the same for the remaining mixture.
  • Allow it to cool down a bit for about 5 minutes.
  • Store the balls in an airtight container.

That serves as a great evening snack and at the same time, healthy too. I have added only ¼ cup of sugar as I don’t prefer too sweet ones. I powdered cashews, pistachios and added them to the powder.
