Popcorn Nut Mix – An Edible Christmas gift – Bold Crunchy low-calorie Whole grain Sugar-free nut mix!

Christmas is just five days away! Hope everyone is sweating in Kitchen preparing cookies, cakes to gift your family and friends. I did half of my schooling in Christian-based schools and a half in orthodox Hindu based schools. Hence, I know Bible as much as I know Ramayana. Christmas always brings joy to me. Do you need a reason to celebrate? I don’t. The purpose of festivity to hang around with friends, exchange gifts with them and spread happiness. As a kid, I love Christmas which comes as a relief in between my half yearly exams. My bestie, sofi, celebrates Christmas and now, I have someone at home who loves Christmas – SJ! I always associated Christmas with the colorful stars hanging at the entrance of every house. Stars of different sizes and different colors are hanged at the door. I used to gaze at every house on the way from my school. My bestie used to bring Christmas goodies specially saved for me. They go to church on the night before Christmas to attend their prayers and get their gifts from Santa Claus. At school, we clicked photos with Santa Claus and they distributed chocolate in the prayer hall. Christmas always meant stars, lights, jingle bells, gifts, cake and of course, Santa Claus.


Later, I get to know the real meaning of the celebration from SJ. He said they gave Wine at the church on the eve of Christmas. He narrated every proceeding but me being myself, remembers only Wine. (Now, you guys don’t laugh at me)  Last year, I bought myself a Fraser and decorated with a variety of ornaments. This year, I am baking lot of cookies and gifting to my known friends. Yes, I miss SJ badly. Wish he would have been here, then I would have thrown a party – Christmas Party – that would be real fun.

Enough of stories, I know everyone is occupied with the preparation of gifts. But, in case, if you are a lazy goose like me, then the Popcorn Nut Mix is the perfect time saver you need now. It has nuts, popcorn, Chex, spicy, salty and what not. Toss all the nuts with oil and spice! Bake for few minutes. That’s it. You are done with the crunchy low-calorie whole grain sugar-free snack. I call it as a super snack mix.  Toast a super snack mix and gift your friends. Bake a bowl of nut mix and let your guests much away to their heart’s delight without guilt.

Here is the Crunchy Bold Nut mix.

Ingredients

  • 1 Cup Whole- wheat cereal (I used Chex)
  • 2 Cups Unsalted Popcorn
  • ¾ Cup Wasabi Peas
  • 2/3 Cup Unsalted Cashew halves
  • 2 tablespoon Canola Oil
  • 1 teaspoon Low Sodium Soy Sauce
  • ½ teaspoon Red Chilly powder (adjust according to your taste buds)
  • 1 teaspoon Dry Ginger Powder
  • 1 teaspoon Garlic Powder

Method:

  • Preheat oven to 250 degrees Fahrenheit
  • Combine Chex, wasabi peas, and cashews in a bowl.
  • Now, drizzle oil to the mixture and mix them evenly.
  • Add ginger powder, soy sauce, garlic powder and red chilly powder. Toss them well.
  • Add popcorn to the mixture and toss.
  • Spread the popcorn-nut mixture on a rimmed baking sheet.
  • Bake for 30 minutes, tossing them once after 15 minutes
  • Remove from the oven and allow them to cool.
  • Once cooled down, store the popcorn-nut mix in an airtight container.
  • Toast yourself a super snack mix and gift your friends!
