Radish Soup | Diabetic Friendly

Radish Soup – A delicious tasty soup prepared with simple ingredients in your kitchen pantry and radishes. Perfect to keep your warm in cold Burgh weather!

It’s been raining for the whole day in Burgh and we had flood warning too. We started earlier today from office as the parking lot was flooded, so we had to clear our car from the lot. Moreover, it’s Friday! Do you need any more reason to leave office early? It was pouring down heavily when I reached home. My little plants in the patio looked bend down due to the wet soil. I was craving for a spicy and hot food. Bajji would have been perfect but then I was lazy to prepare it. I had few radishes in my pantry and these guys don’t prefer radish in their dish. The only choice left for me is to blend them. This weather called for a hot Radish soup. Tada… Here it is. I can’t wait to share the delicious recipe with you guys and hence, penned down. Yeah, I am sipping the piping hot soup while enjoying the misty burgh through my window.

Radish is a root vegetable which is pungent or sweet in taste with lots of juice. Radishes are very filling which will satisfy your hunger packs without increasing your calorie count. They have very low digestible carbohydrates and contain a lot of water, thus making it a very good dietary option for weight loss. They do have a low glycemic index which increases the efficiency of metabolism and a great option for diabetics patients. Radish, being a bundle of nutrients is often underestimated and not used in everyday cooking. When you want to include more veggies in your food, then the best option is to blend them.  I have prepared the soup with purple ones but that doesn’t stop you from trying it with white ones. Radish soup can be easily prepared with minimal ingredients and tastes delicious, you will not have a clue of pungency in the soup. Prepare this soup effortlessly and enjoy as a mid snack or just sip it before your lunch.

Ingredients:

  • 8 Radishes (Purple one)
  • 2 cups water
  • ¼ teaspoon Garam Masala Powder
  • ½ teaspoon Salt
  • ½ teaspoon Pepper powder
  • Radish Slices for garnish
  • Coriander for garnish

Method:

  • Wash, peel and slice the radish.
  • In a saucepan, add radish slices, garam masala powder, and water.
  • Cook the radish until tender.
  • Remove from the stove and allow it to cool.
  • Once cooled down, blend and pass it through the strainer.
  • Mix the strained liquid with the required amount of water and pepper.
  • Boil the soup for few minutes, about 5 minutes.
  • Serve the soup hot, garnished with radish slices and coriander leaves.
