Ragi Kozhukattai | Finger Millet Steamed Dumplings

Ragi is must try if you haven’t tried so far. Ragi can be used to make dosas, idlis, upma, cookies, pakodas and what not, even muffins. It’s usually sold as Finger Millet in general stores here. It’s one of the nutritious millet and it’s sad to see that it is absent in our kitchen these days. Ragi is an adaptable crop for drought situations. Ragi is rich in proteins, calcium, and antioxidants. It has anti-microbial and anti-cancer properties. It controls diabetes!!
I always try to incorporate millets in my diet in any form – sometimes as dosas, pakodas, and muffins. Ragi is my favorite among millets because of its versatility. This sweet kozhukattai is a healthy snack and can be made in a few minutes. This is usually called as pidi kozhukattai as it is shaped using hands. You can see the finger prints in the kozhukattai.

This along with Spicy Kozhukattai will be a healthy and nutritious evening snack!

Ingredients:

  • Ragi powder/Finger Millet- 1 cup
  • Grated Coconut- ½ cup (Optional)
  • Jaggery – ½ cup
  • Cardamom powder- ½ tbsp
  • Salt – pinch

Method:

  • Dry roast ragi powder for 2 minutes
  • Boil jaggery with water until it becomes syrup. You don’t want to wait for string consistency. Once the syrup thickens, switch it off and allow it to cool
  • Mix salt and cardamom powder with ragi powder
  • Add jaggery syrup little by little to the mixture and mix well with a ladle until dough-like consistency is reached
  • Take lemon size dough and shape it using your hands
  • Steam them in a steamer for 10 minutes and serve hot with grated coconut

Newbie’s Pitfalls:

  • Don’t skip roasting ragi powder. Unroasted powder might smell which many don’t prefer
  • steam them properly

Variations:

  • Be creative in shapes
  • You can use cooked moong dhal in the mixture
