These Tortillas are nothing but Spanish egg omelet – made with sliced potatoes, fried Peppers and onions topped with beaten eggs and then, baked. They make a wholesome breakfast
Eggs are the best way to start a day as they are loaded with proteins. And when it is loaded with veggies, it looks colorful and tastes delicious.
I have heard about Spain from one of my sister who visited the country recently. Someday I would love to visit their country and soak myself in the beauty of their monuments.
Now, if you are looking for a way to start your day with easy yet healthy breakfast, then you have made a right choice! It’s so simple and can be customized according to your taste.
Cook your fillings until the potatoes are crisp, top with beaten eggs and bake in an oven for 15 minutes.

Ingredients:
1 tsp Canola/vegetable oil
½ Green Pepper sliced thinly
½ Red Pepper sliced thinly
½ Red Onion sliced thinly
¾ lb of Small baby potatoes sliced thinly
2 Small Tomatoes, sliced thinly
Salt to taste
4 large eggs
½ cup of milk
Pepper to sprinkle (Optional)
Fresh chopped Coriander/Parsley for garnish if desired

Method:

    Preheat oven to 350 degrees Fahrenheit
    In a large oven safe skillet/pan, heat oil over medium heat. Add Potatoes and cook for 6-7 minutes. Don’t forget to stir the potatoes often. Add Onion and fry until it becomes transparent. Add pepper and cook for another 7-8 minutes or until the Potatoes are crisp.
    Meanwhile in another bowl, beat eggs, milk and salt together until they become fluffy.
    Pour the egg mixture over the vegetables in the skillet. Smooth the vegetables with the back side of the Spatula and top with thinly sliced tomatoes
    Bake in preheated oven for 10 -15 minutes or until the eggs are set in the center of the skillet. Garnish with coriander leaves and serve immediately when it is hot.

Newbie’s Pitfall:

    Allow Potatoes to become crisp on a stove top in a skillet. They won’t cook great in Oven
    Add Peppers once Potatoes are crisper in such a way the peppers won’t lose their crunchiness
    Always check the eggs in the center of the pan. Remove from oven once they are set

Kids Friendly:

    Top with finely grated cheese and you will be surprised to see your kids eating loads of veggies
    Try out different shapes! Cookie cutters are available in different shapes!
    Try with other vegetables like olives to make the tortilla even more colorful
