Spicy Ammini Kozhukattai – Steamed rice dumplings fried with freshly grounded spices!

A cold day calls for a spicy evening snack. And Kozhukattai is my favorite from my childhood. Hence, thought why not make my favorite hot and spicy for this cold evening.
Always Kozhukattai brings back my childhood memories. My grandma used to prepare paal Kozhukattai every time when we go to my native for holidays. Paal Kozhukattai is a family favorite and I wish to try that someday on my own in my kitchen. I and my brother used to fight for making this small round balls and we end up in making yellow balls instead of white. When you roll your dough with muddy hands and in the floor, you will get only yellow balls right? Yeah, I missed my brother this time when I made white balls and I was cherishing all my memories as I prepared Kozhukattai !

I thought a simple sweet dish would be a perfect partner for this spicy one and hence made Sweet Ragi Kolukattai. These two Kozhukattai with a sunrise coffee is perfect for a great evening!

Ingredients:

Prep Time: 10 mins
Wait Time: 10 mins
Cooking Time: 15 mins
Serves : 3 to 4

For Dough:

  • Rice Flour – 1 cup
  • Salt – 1/2 teaspoon
  • Water – 1 3/4 cup
  • Oil – 1 tablespoon (Optional, I didn’t add as I always prefer Oil-less cooking)
  • For Spice Powder:
    • Oil – 1 teaspoon
    • Chana Dal – 1 tablespoon
    • Urad dal – 1 tablespoon
    • Dry Red Chilli – 3
    • Coriander Seeds – 1 tablespoon
    • Whole Pepper – 1/2 teaspoon
    • Cumin Seeds – 1/2 teaspoon
    • Fresh Coconut – 1/2 cup grated

For Seasoning:

  • Oil – 1 teaspoon
  • Mustard Seeds – 1 teaspoon
  • Urad dal – 1 teaspoon
  • Curry leaves a sprig

Spicy Ammini Kolukattai

Method:

  • Sieve rice flour and salt together.
  • Boil water in a pan. Switch off when it reaches boiling point (once water starts bubbling up)
  • Add hot water little by little to the rice flour and mix nicely with a ladle until you get a dough. I would prefer to use my hands and make sure that you are able to tolerate the hotness with your hand.
  • Allow the rice mixture to stand for 10 minutes.
  • Make small balls out of the flour and steam in steamer/Idli cooker for 8 minutes.
  • Meanwhile, we can prepare spicy powder for our steamed balls.
  • Heat oil in a frying pan over medium heat.
  • Add chana dal, Urad dal, coriander seeds, cumin, peppercorns and roast for few minutes until nice aroma comes out of it. Add red chilies followed by coconut and roast for 3-4 minutes.
  • Cool down the mixture and grind into coarse powder in a mixer.
  • Heat oil in a frying pan and add seasoning ingredients.
  • Add the steamed balls and spice powder. Mix well such that the balls are coated with the spice powder evenly.
  • Fry for 3-4 minutes. Switch off the flame and Serve immediately.

Newbie’s Pitfalls:

  • Use hot water. Add water little by little to avoid becoming watery. Less water in the flour will make balls harder.
  • Don’t steam the balls for a longer time as they tend to break.
  • Don’t burn the ingredients. Always add chilies and coconut lastly.
