Sweet Ragi Paniyaram

Sweet Ragi Paniyaram – Paniyaram prepared using ragi and jaggery.SPW1

Paniyaram is my favorite dish and it can be prepared in various ways using rice flour, millets, vegetable paniyaram, egg paniyaran and even chicken too. This paniyaram is prepared using ragi/finger millet and a healthy option. It’s a diabetic friendly and a protein rich recipe. The high protein content of the grain makes it a good source of proteins for vegetarians. Ragi has anti-microbial properties and reduces bad cholesterol, thus preventing cardiovascular diseases. My mom used to prepare ragi upma and ragi dosa. Though it has a handful of health benefits, it’s very hard to make kids eat ragi. But this sweet ragi paniyaram is a kid’s friendly version and you will be amazed to see your kids munching this scrumptious bundle without a break.

Ingredients:

  • 1 cup – Ragi Flour
  • ½ cup Jaggery, powdered
  • 1 cup of water
  • ½ teaspoon Cardamom Powder
  • 1 ripe banana mashed well
  • ¼ teaspoon salt
  • ½ teaspoon of Baking soda
  • 2 tablespoon Rice Flour
  • 2 tablespoon Grated coconut
  • Oil/Ghee for greasing

Method:

  • In a medium sized pot, add a cup of water and jaggery; bring them to boil in medium heat. Allow the jaggery to dissolve in the water. Once it has completely dissolved and became thick, keep aside
  • Strain it in order to avoid impurities or mud
  • In a bowl, add ragi flour, rice flour, salt, cardamom powder, cooking soda and combine them well.
  • Add the jaggery water to the dry ingredients in the bowl and mix them well.
  • If the batter is thick, add required amount of water for mixing. The batter should be of dosa batter consistency.
  • You can reduce the amount of jaggery and add some more bananas.
  • Add grated coconut to the batter and give them a stir. Alternatively, you can fry grated coconut in ghee and add to the batter.
  • Heat appe pan over medium heat.
  • Once it is hot, grease the holes with oil/ghee.
  • Take a spoon of batter and pour it in the holes. Cook with the lid covered.
  • One would see pores on the paniyaram. Flip the other side and cook for about 5 minutes or until a tooth pick inserted in the center of the paniyaram comes out clean.
  • Serve Sweet ragi paniyaram warmly.
