Thinai Uppu Kozhukattai – Foxtail Millet Uppu Kozhukattai is a savory steamed dumpling prepared usually with rice flour and spices. A perfect snack for your evening time!

Are you looking for an easy snack to enjoy your ME time with a cup of Chai? And are you health conscious but at the time love traditional tasty recipes? Then, this foxtail millet uppu kozhukattai is a perfect choice. Uppu Kozhukattai is savory steamed dumplings prepared usually with rice flour and spices. To make it healthier for you to snack without any guilt, let’s prepare these dumplings with foxtail millet. And they are gluten free and vegan. Foxtail millet is a diabetic food and doesn’t have sugar in any form. They are known to release glucose content steadily in the blood without affecting the metabolic rate of the body. Thus, it is healthier, diabetic friendly, low in fat, gluten free cereal, and a perfect vegan option. Prepare these easy yet delicious dumplings with a traditional touch and enjoy your evening time with a cup of your favorite chai.

Ingredients:

  • 1 cup Foxtail Millet
  • 1 cup water
  • 2 Dried Red Chilies
  • 1 teaspoon Gingelly Oil
  • ¼ teaspoon Mustard Seeds
  • ¼ teaspoon Urad dal
  • Handful of Curry leaves
  • Handful of Coriander leaves
  • 1 medium sized Onion, chopped finely
  • 2 Green Chilies, chopped finely
  • ½ teaspoon Salt

Method:

  • Soak foxtail millet in water for about 4 hours or overnight.
  • Drain the excess water and ground them into a fine paste with a cup of water and red chilies. Ensure not to add more water as it will make battery watery. The water amount has to be added accurately as adding more water make it watery and makes the dumplings gummy. At the same time, adding less amount of water makes the batter thick and makes hard dumplings.
  • Keep the batter aside.
  • In a medium Kadai, add oil and heat it over medium flame.
  • Once the oil is hot, add mustard seeds and urad dal. Let it splutter.
  • Add curry leaves, coriander leaves, and chopped chilies.
  • Now, add chopped onions and saute until they become transparent.
  • Reduce the flame and add grounded batter to the pan. Combine them well. The mixture will thicken immediately.
  • Switch off the flame.
  • While the mixture is hot, scoop out the batter using a spoon and roll them into small rounds.
  • Repeat the same with the remaining batter.
  • Steam the balls in the idli cooker or in pressure cooker for about 10 minutes
  • The dumplings will be shiny once cooked.
  • Serve uppu kozhukattai warmly with your favorite chai.
