Yogurt Mango Parfait

Yogurt Mango Parfait – Rich thick yogurt served with chilled Mangoes and Oats granola prepared with grated coconut, nuts, and dried berries 

Summer is the season of Mangoes back home. I still remember my childhood days when Amma used to serve mango slices for curd rice and my brothers appreciate the taste of mangoes for every bite. They used to wipe clean the plate and fight for the last one piece. I never touched even a single piece as I hated it to bits during my childhood days. Yes, I hated mangoes in my initial days. But now, I go crazy with Mangoes and find ways to consume the luscious fruit. Today’s recipe is my favorite way of consuming this King of Fruits for breakfast. It is so simple and can be prepared within few minutes effortlessly. And it is fulfilling as a breakfast option. You can prepare this granola in a larger quantity and save every time you want to prepare this breakfast in no time.


Ingredients:

  • 2 cup Chopped Mangoes
  • 2 cup Thick Curd

Granola

  • 1 cup Rolled Oats
  • ½ tablespoon Unsalted Butter
  • 1 tablespoon Nutmeg Powder
  • 1 tablespoon Cinnamon Powder
  • 2 tablespoon Maple Syrup
  • 1 tablespoon Grated Coconut
  • A handful of chopped Nuts (Almonds, Pistachios, Walnuts)
  • ¼ tablespoon Goji Berries
  • ½ tablespoon Dried Berries

Method:

  • Heat a skillet over medium flame
  • Allow the butter to melt on a heated pan
  • Add rolled oats, coconut and saute for about 5 minutes, until the coconut turns brownish. Ensure not to burn grated coconut.
  • Add nutmeg powder, cinnamon powder, and maple syrup
  • Combine together and saute for about a minute.
  • Finally add chopped nuts, dried berries and combine them together.
  • You can serve it in a plate or layer it in a glass
  • In a plate, add a cup of curd, a cup of mango slices and a cup of granola
  • Serve with chilled yogurt and chilled mango slices
  • And when you eat, just whip them together and enjoy the richness in every bite you savor
