Zucchini Fritters

Zucchini Fritters

These Fritters are unbelievably easy to make and a great way to sneak in some veggies in your diet!

Zucchini is one of my favorite vegetables. It is similar to gourd – a watery vegetable and it goes well with any Italian dishes. My friend, sofi, always used to refer Zucchini as her son’s favorite. Since then, I always wanted to try this vegetable. Last week, I had been to grocery shops and these green beauties were smiling freshly. What else the, I picked up a pound of Zucchini and tried these Fritters. That tasted heavenly!! Yum! Yum!

Last week, prepared these Zucchini Fritters for our Potluck. And it was a huge hit among my friends. Try these low-calorie fritters and surprise your family, especially your little ones.

I have prepared the fritters using oil in the pan. If you are a health freak, then simply bake them for 10 -12 minutes in Oven preheated at 400 degrees Fahrenheit.

Ingredients:

1 Pound of Zucchini, finely grated
1/4 All Purpose Flour
1/4 Cheddar Cheese, optional (Kids Friendly*)
2 Garlic Cloves, minced
1 Egg, beaten
2 tsp Olive Oil
Salt to taste
Pepper, according to your spice level

Method:

Clean Zucchini and grate them nicely. Mix salt with grated Zucchini and leave in a colander for 10 minutes. Use a clean cloth or tissue and drain the Zucchini completely.
In a large bowl, combine grated Zucchini, flour, egg, garlic and mix them well. Season them with salt and pepper according to your taste.
Heat olive oil in a pan over medium heat. Scoop a spoon of mixture and place them in the heated pan. Gently flatten them with the back side of spoon and cook until the fritter changes to golden brown, about 2 minutes.
Flip the other side and cook for another minute.
    Serve immediately with Tomato Sauce.

Kids Friendly Version:
Combine grated cheddar cheese with the mixture and make these cheesy fritters.

Now, prepare this for your evening snack and let me know how it tasted!

Unless you have a no stick pan most of it is left behind. I added some bread crumbs and it made a world of difference. I would also add a few spices as kind of bland

      Hi Lindi,

Thanks for stopping by. Yeah adding bread crumbs makes it more crisper. Yes, its kind of bland without spices. Hope that would have sounded delicious
